Coffee is a $30 Billion dollar industry in the U.S alone. Billions of coffee beans are harvested to sustain this growing market. Sadly, it also generates a lot of waste because following harvesting, the rest of the coffee pod is discarded. Until now…

Coffee flour is the next big leap in agricultural innovation. By using the otherwise unusable parts of the coffee pod, such innovation drastically reduces environmental waste and creates sustainable jobs in emerging markets.

Moreover, coffee flour tastes good and is great for your health. Apart from the hint of coffee flavor, it is rich in anti-oxidants and packed with potassium and iron so you can actually feel good about eating your cookie. And it is gluten-free!

Here is a recipe for gluten free cookies from fearlessdining.com:

Gluten Free Coffee Flour Coconut Cookies

Ingredients:

1 cup shredded coconut

1 cup gluten free flour blend 3 tablespoons coffee flour

1 1/2 teaspoons baking soda

1 teaspoon baking powder

1/8 teaspoon salt

3/4 cup sugar

1/2 cup brown sugar

2 large eggs

1/2 cup melted butter

1 teaspoon vanilla Instructions

Directions:

1. Preheat the oven to 350 degrees.

2. In a large bowl, add all dry ingredients, including the shredded coconut. Whisk to blend.

3. In a small bowl, add wet ingredients. Whisk to blend.

4. Pour the wet ingredients into the dry ingredients and mix well.

5. Use a cookie scoop to drop cookie dough balls onto a parchment paper lined cookie sheet.

Bake 8-10 minutes till cookies are done. Makes 24 cookies.
